Yield: 1 10-inch cheesecake
Ingredients:

2 pounds cream cheese
-
3/4 cup sugar
-
3 tbsp heavy cream
-
3 tbsp sour cream
-
6 eggs
-
2 tsp lemon juice
-
1 tsp vanilla
-
Pie Dough (enough for the bottom of a 10-inch cake pan (about half a recipe)
Instructions:

Preheat oven to 300 degrees.

Grease and flour a 10-inch round cake pan.

Roll out the pie dough and cover the bottom of the pan with the dough.

In a large bowl, cream together the cream cheese and sugar.

Add the heavy cream and sour cream to the bowl. Beat until really smooth.

One at a time, add the eggs. Mixing well after every egg.

Add the lemon juice and vanilla. Mix well.

Place the pan in a water bath, and pour batter into the pan. Bake for 2 hours. It is ready when the center is set.

Let cool on the counter for 1 hour in the pan.

Remove from the pan and place in the refrigerator. Serve cold and with berries.
