Ingredients Bailey’s Mousse:
- 1-pound white chocolate
- 5 each of egg yolks
- 1/8 cup Bailey’s
- ¼ cup gelatin
- 1 cup heavy cream
Ingredients Jack Daniels Mousse:
- 1-pound dark chocolate
- 5 each egg yolk
- 1/8 cup Jack Daniels
- ¼ cup gelatin
- 1 cup heavy cream
Instructions Bailey’s Mousse:
- Spray the molds with baking oil. Spring with sugar. Place them on a tray and place tray in the freezer until the mouse is ready.
- In a medium bowl, cream the egg yolks.
- In a large bowl, whip the heavy cream. Whip to soft peaks.
- In a double boiler, melt the chocolate.
- In a small bowl, dissolve the gelatin in boiling hot water. Let soften.
- Add the gelatin mixture to the chocolate slowly. Make sure to keep stirring while adding.
- Stir in the Bailey’s to the chocolate mixture. Mix well.
- Fold in the yolks.
- Fold in the whipped cream.
Instructions Jack Daniels Mousse:
- In a medium bowl, cream the egg yolks.
- In a large bowl, whip the heavy cream. Whip to soft peaks.
- In a double boiler, melt the chocolate.
- In a small bowl, dissolve the gelatin in boiling hot water. Let soften.
- Add the gelatin mixture to the chocolate slowly. Make sure to keep stirring while adding.
- Stir in the Jack Daniels to the chocolate mixture. Mix well.
- Fold in the yolks.
- Fold in the whipped cream.
To Assemble:
- Remove the molds from the freezer.
- Place Bailey’s mousse in the mold.
- Place Jack Daniel’s mouse over Bailey’s mousse.
- Garnish with a cigarette décor.
- Garnish with the fresh blueberry.
- Garnish with Raspberry sauce.
Note: Raspberry sauce can be made by combining raspberry jam with water.
