Fruit Tarts

This recipe has numerous steps that need to be completed in a specific order. Please read through the entire recipe before starting.

Ingredients Pastry Cream – Crème Patisserie:

  • 2 cups milk, divided

  • 3 eggs yolks

  • 2/3 cup sugar

  • Pinch salt

  • ¼ cup cornstarch

  • 2 tbsps unsalted butter, cold, firm, cut into eighths

  • 1 ¼ tsp vanilla extract

Ingredients Rich Flan Pastry – Pate Sablee:

  • 3 ½ cups unsalted butter

  • 2 cups powdered sugar

  • 4 egg yolks

  • 6 cups flour

  • 1 lemon rind, finely grated

  • 1 tsp vanilla extract

Instructions Pastry Cream – Crème Patissiere:

  1. In a medium bowl, whisk together the egg yolks, sugar, cornstarch, salt, and the remaining ½ milk. Whisk until everything is dissolved.

  2. In a double boiler, place 1 1/2 cup milk. Cook over medium heat and heat until scalded.  Remove from the heat for a moment.

  3. Slowly stir the egg mixture into the scalded milk. Whisk the mixture constantly.

  4. Add the mixture back on the double boiler and cook until the mixture becomes nice and thick. You want to keep whisking so the eggs don’t scramble. If the eggs scramble you need to start over.

  5. Cook until the mixture becomes the thickness of mayonnaise. This should take about 7 to 10 minutes.

  6. Remove the mixture from the heat and whisk in the butter and vanilla.

  7. Place the mixture in a clean bowl, and cover with plastic wrap. Make sure a layer of the plastic is actually custard so a skin doesn’t form.

  8. Place in the refrigerator overnight.

Note: Whisk before using the next day.

Instructions Rich Flan Pastry – Pate Sablee:

Note: There are numerous ways to make this; In a food processor or On a board or in a large bowl. Below are the two methods.

In a food processor:

  1. Using a steel blade, combine the butter and sugar in a food processor.

  2. Pulse on and off for 10 seconds. You want it to be well blended.

  3. One at a time, add the eggs. Blend until well absorbed.

  4. Add the flour, lemon rind and vanilla in the food processor. Pulse just until the dough is blended.

Note: You don’t want to over mix because the dough will become tough. That will be crumbly and can cause the crust to shrink.

On a board or in a large bowl:

  1. Lightly flour a board or a large bowl.

  2. Form a well in the center of the flour. That means basically make a bowl like hole in the middle of the bowl.

  3. Add the remaining ingredients in the following order; Using your fingers, blend together the butter and sugar. Place in the center. Add the egg, blend, add another egg, blend and continue until you have combined all the eggs. Slowly push the flour into the mixture.

  4. Once all the flour is absorbed knead the dough until it all holds together. Do not over knead.

  5. Preheat the oven to 350-degrees.

  6. Roll out the dough into 1/8-inch thick.

  7. Using a cutter, cut the circles out and place in tart shells.

  8. Bake until golden brown.

Note: Disney does not give a specific baking time.

To assemble the tarts:

  1. With all ingredients fully cooled, evenly fill the tart shells with the pastry cream.

  2. Decorate with your favorite fruits. Use different color fruits for a more decorated result.

  3. Place the tart in the refrigerator for one hour.

Optional Glaze:

Ingredients:

  • Apricot Jam

  • Water

Instructions:

  1. Mix together the jam and a small amount of water. Stir together until thick as syrup.

  2. Brush the glaze over the fruit and let set in the refrigerator until fully set.
