Ingredients:

1 cup milk
-
1 cup buttermilk
-
1 ½ cups yellow cornmeal

4 tbsps butter
-
1 ½ cups frozen corn

2 tbsp baking powder
-
3 cups creamed corn, heated
Instructions:

Preheat oven to 375F degree. Grease a 2-quart baking dish.

In a double boiler, heat milk on high heat.

In a medium bowl, mix together the buttermilk and cornmeal. Add the mixture to the milk. Stir constantly to avoid lumps. Should be smooth. The mixture should thicken in 5 minutes.

Add in butter, corn and baking powder. Stir and cook for 2-3 minutes.

Pour the mixture into the prepared baking dish. Bake for 20 to 30 minutes. The center will become slightly firm.

Once firm, spoon the creamed corn over the bread. Serve immediately.
