Wheat Pestoleros

Yield: 3 dozen 2-ounce rolls or 4 loaves


  • 4 1-ounce packages active dry yeast

  • 4 cups warm water

  • 4 cups all-purpose flour

  • 4 cups pastry flour

  • 4 cups whole wheat flour

  • 2 tbsps. Honey

  • 6 tsp. Salt


  1. In a large bowl, combine the yeast and water. You need to allow at least 5 minutes for the yeast to sit and activate before continuing to the next step.

  2. In a large bowl, sift together all the ingredients except for the salt.

  3. Using an electric mixer with a dough hook, add the yeast mixture, then the flour mixture and last the salt on top. Always add the salt last and keep it away from the rising yeast. Mix well until combined.

  4. Cover and allow the dough to rest for 30 minutes.

  5. On a clean and floured surface, knead the dough for about 10 minutes.

  6. Divide dough into desired quantity. Score (slice the top of the dough) each of the dough loaves. You only want to score enough to break the skin. Cover and allow to rest in a warm area for 1 hour and 15 minutes. This will double the size of each loaf.

  7. Preheat the oven to 400F degrees.

  8. Bake for 30 minutes or until golden brown. The cooking time will depend if you decided to make rolls or loaves. Remove from heat and place on wire rack to cool completely before cutting into the rolls or loaves.
