Yield: 8 to 10 servings
Espresso Syrup
Ingredients:

1/3 cup water
-
½ cup sugar
-
2/3 cup strongly brewed espresso coffee
-
¼ cup Italian or domestic brandy (optional)
Instructions:

In a small saucepan, combine the water and sugar and bring to simmer. Stir to dissolve the sugar.

Remove from heat source and let cool

Add the coffee and brandy (optional )
Mascarpone Filling
Ingredients:

1 ½ cups heavy whipping cream
-
1/3 cup sugar
-
2 tsp vanilla extract
-
1 pound mascarpone cheese (softened and room temperature)
Instructions:

In a large bowl, whip the cream and sugar together. Soft peaks will form.

In a large bowl, place the mascarpone. Fold the cream mixture into the mascarpone.
Assembly
Ingredients:
-
12 Twinkies, sliced ½ inch thick
-
Espresso Syrup
-
Mascarpone Filling
-
Cocoa powder for dusting
Instructions:
-
Using a 2-quart baking dish, place a layer of Twinkie slices on the bottom.

Drizzle with the syrup
-
Top with a layer of the half the mascarpone.
-
Another layer of Twinkies.
-
Top with syrup
-
Cover with mascarpone. Use a spoon to smooth out the filling layer.

Cover with plastic wrap and place in the refrigerator for up to 24 hours.

When ready to serve, lightly dust the cake with the cocoa powder.
