Tonga Toast

Ingredients for Strawberry Compote:

  • 10 Large strawberries

  • ¼ cup sugar

  • 1 tsp vanilla

Ingredients for Tonga Toast:

  • 2 or 4 slices sourdough bread (cut into 1 or 1 ½ inch thick pieces)

  • 1 banana

  • ½ cup sugar

  • 1 tsp cinnamon

  • 1 egg

  • ¼ cup milk

  • ½ tsp vanilla

  • oil for frying

Instructions for Strawberry Compote:

  1. In a medium saucepot, bring 6 sliced strawberries, sugar and vanilla to boil over medium heat.

  2. In a blender, combine 4 sliced strawberries and the cooked mixture. Blend together well.

  3. Serve warm or cold over the Tonga Toast.

Instructions for Tonga Toast:

  1. Cut a deep pocket into each slice of bread

  2. Cut your banana into slices and stuff into the bread slices

  3. On a plate, combine the cinnamon and sugar

  4. Heat 4 inches of oil or shortening or heat up your deep dryer

  5. In a medium bowl, combine the egg and milk.

  6. Soak the bread in the egg/milk mixture. Soak for a few minutes to make sure it soaks through the bread fully.

  7. Fry both sides until they are golden brown. Three minutes should be enough for both sides of the bread.

  8. Remove from oil. Press both sides into the cinnamon and sugar mixture.
