Ingredients:

1/2 cup water

1/2 cup plus 1/3 cup granulated sugar

1/4 cup espresso coffee

1/4 cup espresso coffee

1/4 cup dark rum
-
3 cups mascarpone cheese
-
3 large egg yolks
-
2 tsp. pure vanilla extract

2 cups heavy cream
-
12 Italian ladyfingers
-
1 tbsp. cocoa powder, for serving
Instructions:

In a 2-quart saucepan, heat 1/2 cup water, and 1/2 cup sugar over medium heat. Heat until the sugar is dissolved.

Pour the mixture into a bowl and let it cool. Stir in the espresso and the dark rum.

Using an electric mixer beat the mascarpone, egg yolks, 1/3-cup sugar, and vanilla. Beat until very light and smooth.

Add the heavy cream and beat 2 to 3 minutes. Beat until it gets thick.

In a medium bowl, soak the 5 ladyfingers in the coffee syrup.

Arrange the ladyfingers in the bottom of a 10-inch round, 4-inch-deep bowl. Add a layer of the mascarpone filing 2-inch thick.

In a medium bowl, soak the remaining 7 ladyfingers in the coffee syrup. Once soaked, place them on top of the mascarpone filling. Cover with the remaining mascarpone filling. Smooth the top with a spatula.

Place in the refrigerator for at least 4 hours before serving.

When ready to serve, sprinkle with the cocoa powder over the tiramisu.
