Stuffed French Toast (now called Tonga Toast)

Yield: 2 Servings

Ingredients:

  • 2 or 4 slices of sourdough bread cut 1-inch thick.

  • 1 banana

  • 1/3 cup sugar

  • 1 tsp. cinnamon

  • 1 egg

  • ¼ cup milk

  • ½ tsp. vanilla extract

Instructions:

  1. Cut 1-inch pockets in the top of each bread slice.

  2. Peel bananas, and cut them crosswise.

  3. Stuff two pieces of banana into each bread pocket.

  4. On a plate, combine the cinnamon and sugar. Set aside.

  5. On a plate, place paper towel and set aside.

  6. In a large bowl, mix together the egg, milk, and vanilla.

  7. Preheat your oil or shortening.

  8. Place a piece of stuffed bread into the egg mixture and make sure it is coated well.

  9. Fry both sides of the bread for about 3 minutes. The sides should be golden brown.

  10. One fried, place on paper towel plate to drain excess oil for a moment.

  11. Sprinkle with the cinnamon sugar mixture and serve hot.

  12. Spread whipped butter and maple syrup over if you desire.
