Ingredients:

2 or 4 slices of sourdough bread cut 1-inch thick.

1 banana
-
1/3 cup sugar
-
1 tsp. cinnamon
-
1 egg
-
¼ cup milk
-
½ tsp. vanilla extract
Instructions:

Cut 1-inch pockets in the top of each bread slice.

Peel bananas, and cut them crosswise.

Stuff two pieces of banana into each bread pocket.

On a plate, combine the cinnamon and sugar. Set aside.

On a plate, place paper towel and set aside.

In a large bowl, mix together the egg, milk, and vanilla.

Preheat your oil or shortening.
-
Place a piece of stuffed bread into the egg mixture and make sure it is coated well.

Fry both sides of the bread for about 3 minutes. The sides should be golden brown.

One fried, place on paper towel plate to drain excess oil for a moment.

Sprinkle with the cinnamon sugar mixture and serve hot.

Spread whipped butter and maple syrup over if you desire.
