Ingredients:

2 teaspoons sugar

2 teaspoons flour

1 cup milk

1 egg, slightly beaten

1 egg yolk, slightly beaten

1 cup fresh raspberries or 1 package (10 ounces ) frozen raspberries

2 tablespoons raspberry liqueur
-
6 egg whites
-
Granulated sugar
-
1 teaspoon confectioners’ sugar

1 tablespoon cream
Instructions:

In a small saucepan over low heat, combine the sugar and flour together.

Mix in the milk.

Add the egg and egg yolks. Mix well. Bring entire mixture to a thick mixture. Stirring constantly so the eggs do not scramble. The mixture will become custard-like. Let cool.

In a small bowl, mash the raspberries.

In a medium pot, add the raspberries, and the raspberry liquor. Cook until the mixture becomes jam-like. Force through a strainer and let cool.

Preheat your oven to 320F.

Mix together the raspberry puree with ¾ cups of the custard.

In a medium bowl, beat the egg whites until you reach stiff peaks.

Fold the egg whites into the custard mixture.

Place ¼ cup of the custard mixture aside for later.

Lightly butter and sugar 4 8-ounce soufflé dishes.

Pour the ¾ custard mixture into the prepared soufflé dishes.

Place the dishes into a pan of hot water. Bake for 20 minutes.

Dust the baked soufflés with confectioners sugar.

In a small bowl, add the ¼ cup custard mixture you placed aside earlier with 1 tablespoon of cream.

Drizzle over the baked soufflé dish.
