Raspberry Chiffon Pie

Yield: 1 9-inch pie

Ingredients:

  • 1 1/4 raspberries, frozen

  • 3 tbsps. sugar

  • 1 tbsps. gelatin, unflavoured

  • 3 tbsp raspberry liqueur

  • 1 1/4 cups whipped cream

  • 1/2 cup raspberry yogurt

  • 1 9-inch pie shell, baked

Instructions:

  1. In a medium saucepan over medium-high heat, simmer the raspberries, sugar, and gelatin. Simmer until the gelatine and sugar are dissolved.

  2. Pour into a large bowl and place in the refrigerator for at least 2 hours. Chill until the gelatin sets.

  3. Once set, whisk the yogurt and raspberry into the gelatin.

  4. Pour the mixture into the pie shell and let chill for 3 to 4 hours before serving.
