Spice Short-Crust Pastry
Ingredients:

1 ¼ cups pastry flour

¼ granulated sugar
-
1 egg yolk
-
½ cup butter chilled
-
Pinch of cinnamon
-
Pinch of nutmeg
-
Pinch of cardamom
Instructions:

In a large bowl, mix together the flour and the spices.

Create a well in the middle of the flour mixture. Add the sugar and egg yolk to the well.

Cut the chilled butter into small pieces and place around the flour. Using a pastry cutter cut the butter into the flour and sugar mixture. You only want to moisten the ingredients.

On a clean surface, gather the dough and knead enough that it stays together.

Wrap the dough in plastic wrap and let chill for 30 minutes.

Preheat the oven to 400 degrees.

Roll out dough and place in a tart pan.

Use a fork to make tiny holes in the shell. Bake for 8 minutes. The shell will be golden brown when complete. Cool on wire rack.
Filling
Ingredients:

6 extra-large egg yolks
-
1 ¼ cups sugar
-
3 cups heavy cream
-
1 cup pumpkin puree
-
Pinch nutmeg
-
Pinch cinnamon
-
Pinch allspice
Instructions:

In a double boiler over very hot water, whisk together the egg yolks and sugar. It will become lemon-colored and mousse-like. Remove from heat source and set aside.

In a saucepan, combine the cream, pumpkin, and spices. Bring the mixture to a boil. Once it hot boiling, remove from the heat.

Strain the mixture. Pour it into the egg mixture. Whisk very fast as you combine them.

Place the double boiler on the heat source again and cook. It will become a thick custard. Let cool aside.

Once it is cooled, place the mixture into the pastry shells. Place them in the refrigerator for 4 hours.

Once they are chilled, sprinkle 2 tablespoons of sugar over each. Place under the broiler for 2 minutes so the sugar can caramelize. Serve immediately.
