Peach Cobbler (Chef)

Yield: 4 official Servings (but I say 6-8)


  • 2 1/2 cups sliced peaches (canned, drained)

  • 2 tsp apricot brandy

  • 2 tsp unsalted butter

  • 2 tsp vanilla extract

  • 1 tsp cinnamon

  • 1/2 cup sugar

  • 2 tsp lemon juice

  • 1/4 tsp nutmeg

  • 1 tbsp cornstarch

  • 2 tsp water

  • 1/2 package pie dough (or 1 ready-made pie shell)


  1. Preheat oven to 350F

  2. In a large saucepan, boil the peaches, brandy, butter, vanilla, cinnamon, sugar, lemon juice, and nutmeg.

  3. In a small cup, combine the water and cornstarch. Mix well together. Once mixed, add to saucepan mixture. Mix together until it gets thick.

  4. Pour the peach mixture into a deep dish pie plate. Cover with pie dough and crimp the edges to seal in the peach filling.

  5. Bake for 45 minutes and let cool a little before servings. It will be very hot.
