Macadamia Nut Pie

Yield: 1 9-inch pie

Ingredients:

  • 1/2 cup butter

  • 1/2 cup brown sugar

  • 1/2 tsp vanilla extract

  • 1/8 tsp salt

  • 3/4 cup light corn syrup

  • 3 eggs

  • 2/3 cup macadamia nuts (coarsely chopped)

  • 1 9-inch unbaked pie shell

Instructions:

  1. Preheat oven to 400F degrees

  2. In an electric mixer, cream together the butt, sugar, salt, and vanilla.

  3. Blend in the syrup. Add in the eggs slowly. Mix well after each egg.

  4. Fold in the nuts.

  5. Pour mixture into unbaked pie shell and bake for 10 minutes.

  6. Reduce the heat to 325F degrees and bake for 45 minutes. Pie is done when the center is firm and set.
