Ingredients

2 coconuts, cut in half or 1/3 cup shredded coconut

1/2 cup water

2 tbsp butter

1/8 tsp salt

1/3 cup raw long grain rice

1/2 cup half and half
-
3/4 cup milk
-
3 tbsp coconut cream
-
3/4 cup drained crushed pineapple
-
1 egg yolk
-
2 tbsp sugar
-
4 egg whites
-
1/8 tsp cream of tartar

1/2 cup sugar
Instructions
1. Wash and dry the cut coconut pieces. Place the pieces in custard cups.
2. In a large saucepan, combine the water, butter, and salt. Bring to a boil.
3. Stir in the rice to the boiling water. Let it simmer until all the moisture is absorbed into the rice. It will become the consistency of a light cream sauce.
4. Add the coconut cream to the saucepan and let simmer.
5. In a large bowl, combine the pineapple, egg yolk and 2 tbsps sugar.
6. Add some of the rice mixtures to the pineapple mixture and mix really well. Once combined, mix in the remaining of the rice mixture. Chill completely.
7. Preheat over to 425F.
8. Place the rice mixture into the custard cups (6-ounce cups x 5).
9. In a medium bowl, beat together the egg whites and cream of tartar. It will become frosty.
10. Slowly add the 1/2 cup to the bowl while continuing to beat. Beat until the meringue to peak.
11. Spoon the meringue over the chilled pudding. Swirling with a spoon.
12. Place on a baking sheet and bake for 4 to 5 minutes. They will become a light brown color.
