Ingredients:

3 ½ cups flour

½ cup sugar
-
2 tsp. baking powder
-
½ tsp. salt

tbsps. Lemon rind
-
1 cup butter
-
3 eggs
-
¾ cup milk
-
1 cup raisins
-
1 ¼ cups shredded coconut
-
2 eggs whites – lightly beaten
Instructions:

Preheat oven to 350F Degrees and prepare a greased cookie sheet.

In a large bowl, sift together the flour, sugar, baking powder and salt. Add lemon rind after sifting.

In a small bowl, mix together the milk and eggs. Add the milk mixture to the flour mixture. Blend just until combined.

To the same bowl, add the raisins and coconut and mix together.

Use an ice-cream scoop (or tablespoon) to make balls of dough and place on cookie sheet slightly apart.

Brush the tops of the dough balls with the beaten egg whites and then sprinkle with sugar.

Bake for 25 minutes or until golden brown. The buns will be firm to touch.

In a medium bowl, combine the nuts, flour, baking soda and baking powder. Mix together. Add to oatmeal mixture and mix.

Divide the batter equally into each muffin slot. You want to fill each paper cut to ¾ of the way full.

Bake for 15 to 20 minutes.
