Ingredients:

4 tbsps. butter

¾ cup honey
-
1 large egg
-
1 cup whole wheat flour

1 ½ cups all-purpose flour
-
1 ½ tsp. baking powder

1 tsp. baking soda
-
½ tsp. sea or regular salt
-
½ cup chopped dates (about ¼ pound)

½ cup chopped walnuts
-
¾ cup buttermilk
Instructions:

Preheat oven to 350F degrees.

Prepare a well-greased 9x4x2-inch loaf pan.

Using an electric mixer, cream together the butter, honey, and egg. It will be light and fluffy.

In a large bowl, sift together the flours, baking powder, baking soda, and salt.

In a small bowl, combine the dates, nuts and a few tablespoons of the flour mixture. Mix together carefully.

In a large bowl, alternate adding the dry and the wet mixtures. Mixing well after adding parts of each. Mix the dates mixture.

Spoon the mixture into the prepared loaf pan.

Bake for 60 minutes. Let cool in pan for 10 minutes on a wire rack. Remove from the pan carefully and place back on the rack until completely cool.

Wrap in foil and store overnight in the refrigerator before cutting and serving.
