Honey Coconut Loaf

Yield: 1 loaf


  • 1/3 cup water

  • 2 eggs

  • ¼ cup vegetable oil

  • 1 cup honey

  • 2/3 cup sugar

  • 3 cups rye flour

  • 1 ½ tsp. baking soda

  • ½ tsp. salt

  • 1 ½ tsp. cinnamon

  • ¼ tsp. allspice

  • ¼ cup candied citron

  • ¼ cup short shredded coconut


  1. Grease and flour a 9x5x4-inch loaf pan.

  2. Preheat your oven to 350F degrees.

  3. In a medium bowl, combine the water, eggs, vegetable oil, honey, and sugar. Beat together.

  4. In a medium bowl, combine the flour, baking soda, salt, cinnamon, and allspice.

  5. Slowly add the water mixture to the flour mixture. Stirring to blend.

  6. Fold in the coconut and citron.

  7. Spoon into the prepared loaf pan and bake for 60 minutes. It is done when you can insert a toothpick in the center and it comes out clean. Cool in pan for 10 minutes on a rack. Remove from rack and place back on the rack to cool completely.

  8. Wrap in foil and store overnight before cutting.
