Ingredients:

12 egg yolks

8 ounces sugar

4 cups heavy cream

2 ounces semi-sweet chocolate

2 tsp instant coffee
Instructions:

In a double boiler, warm the egg yolks and sugar. The sugar will dissolve. Whisk constantly or the egg yolks will scramble.

Place the egg yolk mixture in a large bowl, and whip on high. It will become stiff.

In a double boiler, melt the chocolate and set aside.

In a small bowl, dissolve the coffee in 4 tbsp of water. Set it aside.

In a large bowl, whip the cream until you achieve soft peaks.

Fold the egg yolk mixture into the whipped cream. Divide into three bowls.

In bowl one, mix in the chocolate.

In bowl two, mix in the coffee.

In a 4 x 4 x9-inch loaf pan, layer the three bowls. First place the chocolate bowl, top with the coffee mixture and top that with the plain mixture bowl. Place in the refrigerator after each layer for 10 minutes. It will allow the cream to set. Once all the layers are down, place in the freezer for 4 hours.

Dip pan in hot water to remove. Serve with a chocolate, caramel or strawberry sauce.
