French Fried Ice Cream (Garden)

Yield: 4 servings


  • 1-pint vanilla ice cream

  • 2 egg whites, divided

  • 3 tbsps. almond paste

  • 1 1/2 cups graham cracker crumbs

  • 4 10-inch flour tortillas

  • Oil for frying

  • Walnuts, chopped

  • Mint Leaves, fresh

  • Vanilla sauce

  • Sliced peaches, fresh or canned

  • Strawberries, French


  1. Scoop four balls of ice cream balls. Place in freezer and freeze until very hard.

  2. In a small bowl, place the graham cracker crumbs.

  3. In a small bowl, blend together one egg white into the almond paste until very smooth.

  4. Divide it into 4 equal parts. Roll out each piece. Wrap one piece around each ice cream ball. Completely covering each ball.

  5. Dip the ball into the egg whites and then roll in the graham cracker. Coat them well.

  6. Place in freezer until ready to serve.

  7. When ready to serve, in a large pot, heat the oil. Should be about 3 inches deep.

  8. Fry the tortilla shells in the oil and fry until golden brown. Remove from the oil and place over an upside-down bowl. When it cools, it will take the shape of the bowl.

  9. Fry the ice cream ball for 15 to 20 seconds and place in the tortilla shell. Garnish with the vanilla sauce, peaches, strawberries, walnuts and fresh mint leaves. Serve right away.
