Ingredients:

3 egg whites
-
1 tsp cider vinegar
-
1/2 tsp salt

1 cup sugar

1 cup almonds, ground

1 cup mini chocolate chips
Instructions:

Preheat oven to 300F degrees

In a large bowl, whip egg whites, cider vinegar, and salt. Whip with an electric mixer until foamy.

Add a tablespoon of sugar at a time. Whip until you achieve soft peaks.

With a spatula, fold in the almonds and chips.

On an ungreased cookie sheet, place teaspoon size balls.

Bake for 40-45 minutes or until golden brown. Cool on a wire rack.

Once completely cool, cover in melted chocolate and then sprinkle with pistachio nuts.
