Coconut Squares

Yield: 64 1-inch squares

Ingredients:

  • 1/4 cup coconut cream

  • 2 cups half-and-half

  • 1/2 cup cornstarch

  • 1 cup shredded coconut

  • 1/2 tsp cinnamon

  • 1 1/4 cups coconut (toasted for coating)

Ingredients:​​

  1. Lightly grease an 8×8-inch pan.

  2. In a saucepan (medium), combine all the ingredients except the toasted coconut. Mix the bowl well and heat over medium heat. Stir constantly. Mix until the mixture pulls away from the sides.

  3. Place mixture in the prepared pan. Place in refrigerator for at least 2 hours.

  4. Once chilled, cut into 1-inch squares. Roll each piece in the toasted coconut. Coat them well.
