Cocomisu (Coconut Tiramisu)

  • 1 cup Sugar
  • 2 cups Water
  • 10 oz Coconut Puree
  • 1 cup Kahlua Liquor
  • 30 pieces Ladyfingers
  • 3 lb Mascarpone Cheese
  • 1 lb Powder Sugar
  • 8 Egg Yolks
  • 7 sheets Gelatin
  • 10 oz Coconut Puree
  • 1/2 can Coco Lopez
  • 1 qt Heavy Cream
  • 1 cup Toasted Coconut



  1. Toast coconut on a baking sheet.
  2. In a small saucepot, combine the water and sugar. Once the sugar is melted and the mxiture is boiling remove from the heat.
  3. In a large bowl, combine the syrup, 10oz. coconut puree and Kahlua.
  4. Place the ladyfingers into the bowl and let the ladyfingers soak up the liquid.
  5. In a small bowl, combine cold water and the gelatin leaves. Set aside until soft. Discard the water.
  6. In a small bowl, place the soft gelatin and 10oz. coconut puree. Place in a hot bath. It will disolve the gelatin. Set the bowl aside.
  7. In a stand mixer with a whisk attachment, combine the mascarpone cheese and powdered sugar. Whip unitl mixed.
  8. Add the yolks, coco lopez and heavy cream. Whip until the mixture is thick.
  9. In the gelatin bowl, place a little bit of the cream mixture and mix. Then place the small mixture into the cream bowl and whip well. Whisk until it has doubled. Do not overwhip or you will curdle the cheese.
  10. In the serving dish, place a layer of soaked lady fingers, cover with a layer of whipped cream (about 1.5 inches). Place another layer of lady fingers and then more filling.
  11. Finish with a layer of the cream mixture.
  12. Sprinkle toasted coconut over the top to finish.
