Chocolate Cookie Mousse

Yield: 6 servings

Ingredients:

  • 6 Chocolate Sandwiches with cream filling

  • 2/3 cup (5.5) ounces of chocolate

  • 1 cup heavy whipping cream

  • ½ tsp. granulated gelatin

  • 3 egg yolks

Instructions:

  1. In a blender, crumble the cookies. This can also be done by hand.

  2. Using a double boiler, melt the white chocolate chips over hot water. Remove from heat once melted.

  3. In a medium bowl, whip the whipping cream. Medium-firm peaks will form.

  4. In a saucepan, add half the whipped cream and sprinkle it with the gelatin. Let sit for about 3 minutes or until the gelatin softens and swells.  Then over low heat, stirring constantly until the gelatin is dissolved.

  5. Remove the gelatin from the heat and carefully blend in the egg yolks.

  6. While stirring very fast, add the melted chocolate to the gelatin mixture.

  7. Fold the cookies into the used whipped cream. Once combine, fold it into the chocolate mixture.

  8. Pour into your desired serving dishes. Disney recommends champagne flutes.

  9. Place them in the refrigerator for 2 hours. Serve and enjoy.
