Ingredients:
• 1 ¾ cups sugar
• 1 1/3 cups vegetable oil
• 4 eggs
• 3 cups bread or all-purpose flour
• 2 teaspoons baking powder
• 1 ½ teaspoons baking soda
• 3 ½ teaspoons cinnamon
• ½ teaspoon salt
• 3 cups shredded carrots
• 1 cup chopped walnuts
Instructions:
1. Preheat the oven to 375F
2. Grease and flour a 2 9-inch round cake pans.
3. In a large bowl, mix together the sugar and oil. Mix well.
4. Mix in the eggs. Mix well.
5. In a medium bowl, sift together the flour, baking powder, baking soda, cinnamon, and salt.
6. Slowly add the dry mixture to the egg mixture. Mix until well blended.
7. Stir in the walnuts and carrots.
8. Equally, separate the batter into the two cake pans.
9. Bake for 35 minutes.
10. Cook for 10 minutes still in the pan. After the ten minutes, remove from the pan and let cool on a wire rack.
(Note: The Disney cookbook says you can frost with Butter Cream frosting.)
