Caribbean Sand Bars

Disney Park Recipe:

Location: Cinnamon Bay Bakery – Disney’s Caribbean Beach ResortWalt Disney World

Yield – 9 3-inch squares

Ingredients:

  • 1 1/4 sticks butter

  • 1 1/4 cups light brown sugar, firmly packed

  • 1 cup flour

  • 1/2 tsp. salt

  • 1 tsp. baking powder

  • 2 eggs

  • 1 tsp vanilla extract

  • 1 cup chopped walnuts

  • 4 cups chopped pecans

Instructions:

  1. Preheat your oven to 375F degrees

  2. Butter and flour a 9 x 9-inch pan.

  3. In a large bowl, sift together the flour, salt, and baking powder.

  4. In a large bowl, cream together the butter and brown sugar. Add one egg at a time. Beat well after each egg.

  5. Add the flour mixture to the butter mixture and blend well.

  6. With a spatula, fold in the nuts.

  7. Spread batter over the geared pan. Bake for 25-30 minutes. Cool completely.
