Ingredients Bread Pudding:
• 1 ½ cup milk
• 1 tablespoon butter
• 2 cups stale bread cubes
• 2 eggs, slightly beaten
• ¼ cup crushed pineapple, well drained
• ½ cup sugar
• ¼ teaspoon nutmeg
• ¼ teaspoon cinnamon
• 1 teaspoon vanilla extract
• ¼ teaspoon yellow food coloring
• Lemon Sauce
Ingredients Lemon Sauce:
• 1 ½ teaspoons cornstarch
• 2 teaspoons cold water
• ¾ cup half and half
• 3 tablespoons sugar
• 2 tablespoons butter
• ¾ teaspoon grated lemon rind
• 3 tablespoons lemon juice
• 1/8 teaspoon yellow food coloring
Ingredients Bread Pudding:
1. Preheat the oven to 375 degrees.
2. In a saucepan, scald the milk and butter.
3. Pour the milk mixture over the bread cubes. Let them sit for 5 minutes.
4. Into the bread mixture, add the remaining ingredients. Mix the mixture well.
5. Butter ad 1-quart baking dish.
6. Pour the mixture into the baking dish.
7. Place the baking dish is a pan of hot water.
8. Bake for 40 to 45 minutes. It is done when you can stick a knife in the middle and it comes out clean.
Instructions Lemon Sauce:
1. In a small bowl, dissolve the cornstarch in cold water.
2. In a small saucepan, mix together the cornstarch mixture, half and half, and the sugar. Let simmer for 3 minutes while continuing to stir. Remove from the heat.
3. Stir in the remaining ingredients.
To Serve:
1. Serve the Lemon Sauce over the Bread Pudding.
