Boston Brown Bread

Yield: 3 1-pound loaves

Ingredients:

  • 4 ounces molasses

  • 2 cups milk

  • 1 egg

  • 1 cup all-purpose flour

  • 1 cup rye flour

  • 1 cup whole wheat flour

  • 3/4 cup cornmeal

  • 2 tsp salt

  • 1/2 cup milk

  • 1 tbsp baking powder

Instructions:

  1. Spray the inside of three canning jars (with lids) with non-stick cooking spray.

  2. In a large bowl, mix together the molasses, 2 cups milk, and eggs. Use an electric mixer on medium speed.

  3. In a medium bowl, sift together the flours, cornmeal, and salt. Add to the molasses bowl and mix well.

  4. In a small bowl, dissolve the baking powder and the half a cup of milk. After dissolved, add to the flour mixture. Mix until fully combined.

  5. Divide the batter between the three jars. Seal with the lids.

  6. In a large pot, boil water. Place the three jars in the boiling water standing up. Place the lid on the large pot. Reduce the heat and simmer for 1 hour 45 minutes. Make sure the water does not run dry.

  7. Remove from pot and cool for 2 hours before serving.
