Ingredients bread pudding:
- 1 cup sugar
- 3/4 tsp cinnamon
- 5 eggs
- 1 1/2 cups heavy cream
- 1/2 pound day-old bread (brioche, challah or Texas Toast)
- 3 bananas, sliced into 1/2-inch pieces
- 4 tbsps butter, cut into small cubes
Instructions:
- Preheat the oven 300F.
- Grease a 9×9-inch square pan.
- In a small bowl, mix together the sugar and cinnamon.
- In a medium bowl, whisk the eggs, milk, cream and cinnamon sugar.
- In the 9×9-inch square pan, place half the bread cubes.
- Cover the bread with sliced bananas.
- Top with the remaining bread.
- Pour the milk mixture over the dish. It will fill the pan to two-thirds high. Press the bread into the liquid to make sure the milk mixture is nice and soaked in.
- Sprinkle the butter cubes over the top.
- Bake for 60-70 minutes.
- Let sit for 20 minutes.
- Serve warm and top with chilled vanilla sauce.
Ingredients Vanilla Sauce:
- 1 1/2 cups heavy cream
- 3/4 cup milk
- 1/4 tsp vanilla extract
- 4 1/2 tbsp sugar
- 1 tbsp cornstarch
- 3 large egg yolks
Instructions Vanilla Sauce:
- In a medium saucepan over medium heat, bring cream, milk, vanilla, and sugar to a boil.
- In a small bowl, whisk together the cornstarch and egg yolks.
- Take a few spoonfuls of the cream mixture to the cornstarch mixture. Making sure to stir quickly.
- Pour the cornstarch mixture into the saucepan. Make sure you continuously stir until the mixture is combined and thick.
- Pour the mixture into a bowl, and place in an ice bath too cool.
