Banana Bread Pudding

Ingredients bread pudding:

  • 1 cup sugar
  • 3/4 tsp cinnamon
  • 5 eggs
  • 1 1/2 cups heavy cream
  • 1/2 pound day-old bread (brioche, challah or Texas Toast)
  • 3 bananas, sliced into 1/2-inch pieces
  • 4 tbsps butter, cut into small cubes

 

Instructions:

  1. Preheat the oven 300F.
  2. Grease a 9×9-inch square pan.
  3. In a small bowl, mix together the sugar and cinnamon.
  4. In a medium bowl, whisk the eggs, milk, cream and cinnamon sugar.
  5. In the 9×9-inch square pan, place half the bread cubes.
  6. Cover the bread with sliced bananas.
  7. Top with the remaining bread.
  8. Pour the milk mixture over the dish. It will fill the pan to two-thirds high. Press the bread into the liquid to make sure the milk mixture is nice and soaked in.
  9. Sprinkle the butter cubes over the top.
  10. Bake for 60-70 minutes.
  11. Let sit for 20 minutes.
  12. Serve warm and top with chilled vanilla sauce.

 

Ingredients Vanilla Sauce:

  • 1 1/2 cups heavy cream
  • 3/4 cup milk
  • 1/4 tsp vanilla extract
  • 4 1/2 tbsp sugar
  • 1 tbsp cornstarch
  • 3 large egg yolks

 

Instructions Vanilla Sauce:

  1. In a medium saucepan over medium heat, bring cream, milk, vanilla, and sugar to a boil.
  2. In a small bowl, whisk together the cornstarch and egg yolks.
  3. Take a few spoonfuls of the cream mixture to the cornstarch mixture. Making sure to stir quickly.
  4. Pour the cornstarch mixture into the saucepan. Make sure you continuously stir until the mixture is combined and thick.
  5. Pour the mixture into a bowl, and place in an ice bath too cool.
