Almond Coconut Roll (Disney Park Recipe)

Yield: 16 Rolls


  • 2 packages active dry yeast

  • 1 cup heated milk (120F)

  • 1 tsp. salt

  • 1 tsp. sugar

  • 1 large egg

  • 2 tbsps. Vegetable oil

  • 4 ½ cups bread flour

  • 2/3 cup almond paste

  • 1 tsp. almond extract

  • 2/3 cup toasted coconut

  • Soft butter


  1. In a large mixing bowl with a dough hook, combine warm milk and yeast together. Let sit for 5 minutes.

  2. Mixing while adding, add the remaining ingredients.

  3. On a lightly floured surface, knead slightly and cover with a cloth. Let sit for 30 minutes in a warm place.

  4. Again, on a lightly floured surface, cut into 16 equal pieces. Knead each piece slightly and shape into round loaves.

  5. Place on a large baking sheet about 2-inches apart. Cover and allow to double in size.

  6. Preheat your oven to 400F degrees.

  7. With a knife, cut a cross on top of each loaf.

  8. Bake for 15 minutes. They will become golden brown.

  9. Brush the top with the softened butter and serve hot.
