Pistachio Creme Brulee

Yield: 8 Servings


  • 8 ounces Sugar

  • 8 ounces Egg Yolks

  • ½ ounce Pistachio Paste

  • 42 ounces Heavy Cream


  1. Preheat oven to 325 degrees.

  2. In a heavy bottom pot, scald the cream and sugar. You do not want to boil the mixture.

  3. In a small bowl, temper the cream into the egg yolks. Add the pistachio paste.

  4. Using a baking sheet with sides, pour water and place oven-safe crème Brulee dishes. Do not get water into the dishes.

  5. Pour the liquid into the dishes. Bake for 20 minutes.

  6. Place in refrigerator to cool.

  7. When serving, sprinkle sugar over the top of each dish and torch the sugar with a torch.
