Lemon Ice Cream and Raspberry Creme Fraiche

Ingredients Lemon Ice Cream:

  • 1 1/2 cup Heavy Cream
  • 1 cup Milk
  • 3/4 cup Sugar
  • 2 Tablespoons Lemon Zest finely grated
  • 2/3 cup Lemon Juice, fresh
  • 3/4 tsp. Salt
  • 6 ea. Egg Yolks

 

Ingredients Raspberry Creme Fraiche:

  • 1/2 cup Raspberry Puree
  • 1 cup Sour Cream
  • 1/4 cup  Sugar

 

Ingredients Lemon Ice Cream:

  1. In a heavy saucepan, combine the cream, milk, sugar, zest, and salt. Mix and bring to a boil.
  2. In a large bowl, lightly beat the egg yolks. Add a little of the hot cream mixture to the egg yolks and whisk really well. Be careful not to cook the egg yolk. Whisk the egg yolk mixture into the saucepan. Again, be careful not to cook and scramble the eggs. Cook over low heat until the mixture reaches 170F.
  3. Into a medium bowl, strain the custard and mix in the lemon juice. Cover the bowl with plastic wrap, making sure the plastic wrap touches the custard so a skin doesn’t form.
  4. Once cooled, place in the ice cream maker and follow it’s directions.

 

Ingredients Raspberry Creme Fraiche:

  1. In a medium bowl, combine all the ingredients and mix.
