The recipe is created in three parts. Make in the following order; the Short Dough, Cobbler Filling and the Vanilla Topping.
Ingredients Short Dough:
• ¼ cup shortening
• 2 tablespoons sugar
• ¼ teaspoon salt
• 1 egg
• 2 teaspoon lemon juice
• 1 cup all-purpose flour
• 2 teaspoons baking powder
• 2 tablespoons milk
Instructions Short Dough:
1. In a medium bowl, cream the shortening, sugar, and salt together.
2. On low speed, add an egg and lemon juice.
3. In a medium bowl, sift together the flour and baking powder.
4. Combine the two bowls and mix well.
5. Add the milk and stir until well combined. Set aside.
Ingredients Cobbler Filling:
• ½ cup granulated sugar
• 1 ½ teaspoons cinnamon
• 4 teaspoons cornstarch
• 1-quart apples, peeled and sliced
• 1 tablespoon lemon juice
• 1 tablespoon butter
Instructions Cobbler Filling:
1. Preheat the oven to 400F.
2. Butter a 1 ½ quart baking dish.
3. Thinly slice the apples.
4. Mix together the sugar, cinnamon, and cornstarch.
5. Add the sugar mixture to the apples and mix well.
6. Add the lemon juice and butter.
7. Spoon the short dough over the apples. Making sure to cover them completely.
8. Bake for 25 to 30 minutes or until golden brown.
9. Top with Vanilla Topping (prepare this while the cobbler is baking)
Ingredients Vanilla Topping:
• 1 cup scalded milk
• 2 teaspoons cornstarch
• 1 tablespoon cold water
• 3 tablespoons sugar
• 1/8 teaspoon salt
• 1 egg
• 1 teaspoon vanilla extract
• 2 tablespoons brandy
Instructions Vanilla Topping:
1. Scald the milk.
2. In a medium bowl, dissolve the cornstarch in cold water.
3. Add the sugar, salt, and egg. Mix well.
4. While stirring rapidly, slowly add the milk.
5. Pour mixture into a saucepan and let simmer for 5 minutes. Stir constantly.
6. Stir in the vanilla and brandy. Serve warm.
