Three Kings Bread

Disney Park Recipe:

Ingredients Dough:

  • 4 eggs
  • 1/4 cup water
  • 1/3 cup sugar
  • 4 tablespoons butter, at room temperature
  • 4 tablespoons shortening
  • 1/8 teaspoon salt
  • Zest of 1 orange
  • 1 teaspoons vanilla extract
  • 3- 3 1/2 cups bread flour
  • 4 tablespoons instant yeast

 

Ingredients Sugar Paste:

  • 1/2 cup shortening
  • 1/3 cup sugar
  • 1/2 cup cake flour
  • 1 egg

 

Ingredients Glaze:

  • 1 1/2 cups powdered sugar
  • 3-4 tablespoons milk
  • 2 teaspoons vanilla extract

 

Ingredients Finished Bread:

  • 1 egg
  • 16 Maraschino cherries, chopped
  • Red and green sugar

 

Instructions For Dough:

  1. In a stand mixer with a dough hook, add in this order… eggs, water, sugar, butter, shortening, salt, orange zest, vanilla, and 3 cups of bread flour. Sprinkle the instant yeast over the top of the floor. Knead for 12 minutes. The dough will come together. Add flour is the dough is not soft.
  2. On a clean and floured surface, place the dough and portion it into 16 balls. Place them on two baking sheets lined with parchment paper. Cover them and let them rise for 1 hour. They will double in size.

 

Instructions For Sugar Paste:

  1. In a stand mixer with the paddle attachment, cream together the shortening, sugar, and cake flour.
  2. Add the egg and mix until well blended. Place the bowl aside.

 

Instructions for Glaze:

  1. In a medium bowl, whisk together the powdered sugar, 3 tablespoons of the milk, and vanilla extract. Blend until smooth.
  2. Add some milk if the glaze needs thinning out.

 

Instructions For Three Kings Bread:

  1. Preheat oven to 325F.
  2. In a small bowl, beat the egg. Using a pastry brush, brush the tops of the dough balls.
  3. Pipe a sugar paste in, and X shape over the top of the dough balls.
  4. Bake for 15-20 minutes. Bake until the breads are golden brown.
  5. Cool for 15 minutes.
  6. Top with the glaze.
  7. Sprinkle the tops with red and green sugar.
  8. Top with chopped maraschino cherries.
