Bailey’s and Jack Daniels’s Mousse

Location: The Coral Reef Restaurant – Epcot – Walt Disney World

Ingredients Bailey’s Mousse:

  • 1-pound white chocolate
  • 5 each of egg yolks
  • 1/8 cup Bailey’s
  • ¼ cup gelatin
  • 1 cup heavy cream

 

Ingredients Jack Daniels Mousse:

  • 1-pound dark chocolate
  • 5 each egg yolk
  • 1/8 cup Jack Daniels
  • ¼ cup gelatin
  • 1 cup heavy cream

 

Instructions Bailey’s Mousse:

  1. Spray the molds with baking oil. Spring with sugar. Place them on a tray and place tray in the freezer until the mouse is ready.
  2. In a medium bowl, cream the egg yolks.
  3. In a large bowl, whip the heavy cream. Whip to soft peaks.
  4. In a double boiler, melt the chocolate.
  5. In a small bowl, dissolve the gelatin in boiling hot water. Let soften.
  6. Add the gelatin mixture to the chocolate slowly. Make sure to keep stirring while adding.
  7. Stir in the Bailey’s to the chocolate mixture. Mix well.
  8. Fold in the yolks.
  9. Fold in the whipped cream.

 

Instructions Jack Daniels Mousse:

  1. In a medium bowl, cream the egg yolks.
  2. In a large bowl, whip the heavy cream. Whip to soft peaks.
  3. In a double boiler, melt the chocolate.
  4. In a small bowl, dissolve the gelatin in boiling hot water. Let soften.
  5. Add the gelatin mixture to the chocolate slowly. Make sure to keep stirring while adding.
  6. Stir in the Jack Daniels to the chocolate mixture. Mix well.
  7. Fold in the yolks.
  8. Fold in the whipped cream.

 

To Assemble:

  1. Remove the molds from the freezer.
  2. Place Bailey’s mousse in the mold.
  3. Place Jack Daniel’s mouse over Bailey’s mousse.
  4. Garnish with a cigarette décor.
  5. Garnish with the fresh blueberry.
  6. Garnish with Raspberry sauce.

 

Note: Raspberry sauce can be made by combining raspberry jam with water.
