Sherry Trifle

Disney Park Recipe:

Yield: 6 servings

Ingredients:

  • 3 eggs

  • ¼ cup sugar

  • 1/8 teaspoon salt

  • 2 ¼ cups half and half heated

  • ½ teaspoon vanilla extract

  • 1 package strawberry gelatin

  • 1 cup boiling water

  • ¾ cup cold water

  • ¼ cup sherry

  • 1 cup strawberries, (fresh and sliced)

  • 8 ounces pound cake

  • ½ heavy cream whipped

  • 6 whole strawberries

  • 6 mint leaves

Instructions:

  1. In a medium bowl, whisk together the eggs, sugar, and salt.

  2. Slowly pour (while stirring) the heated half-and-half into the egg mixture.

  3. Place a strainer over a double boiler and strain the egg mixture into the double boiler. Simmer until the custard will coat a metal spoon.

  4. Take off the heat and stir in the vanilla.

  5. In a small bowl, dissolve the gelatin in boiling water. After it’s dissolved, stir in the cold water.

  6. Place the gelatin mixture into the refrigerator to chill until it looks likes heavy syrup. Once chilled, whip in the sherry until light and fluffy.

  7. Fold in the sliced strawberries to the whipped mixture.

  8. In a large serving bowl, place cubes of pound cake. Top with a layer of strawberry filling. Layer a layer of cake on top. Top with custard sauce. Keep layering. Finish with a layer of strawberry filling.

  9. Place trifle in the refrigerator for 2 to 4 hours. It can also be chilled overnight.

  10. When ready to serve, divide into serving dishes. Make sure to get all layers of each dish. Garnish with whole strawberries, whipped cream, and fresh mint leaves.
