Raspberry Fool (Raspberries and Cream)

Yield: 6 servings


  • 1 cup raspberries

  • ¼ cup granulated sugar

  • 2 cups heavy cream

  • 1 tablespoon powdered sugar

  • 1 tablespoon cherry brandy


  • In a bowl, crush the raspberries.

  • In a small saucepan, place the crushed raspberries and sugar. Simmer until thick syrup forms.

  • Using a fine sieve, force raspberries through the sieve to remove the seeds. Let cool aside.

  • In a medium bowl, beat together the heavy cream, powdered sugar, and vanilla.

  • In a small bowl, combine the raspberry syrup and cherry brandy.

  • Fold the syrup mixture into the whipped cream. Chill for one hour before serving. Top with more whipped cream.
