Piggylicious Bacon Cupcakes

Ingredients Cupcakes:

  • Yellow Cake Box mix

  • Bacon grease

  • 12 slices of bacon (cooked and chopped fine)

Ingredients Maple Cream Cheese Icing:

  • 8-ounce package cream cheese

  • 1/4 cup butter, softened

  • 1 tablespoon real maple syrup

  • 2 cups confectioner’s sugar

  • crushed pretzel twists

Instructions Cupcakes:

  1. Preheat your oven according to the directions on the cake mix box.

  2. Follow the directions on the cake mix box. Replace the oil in the recipe with bacon grease in equal parts.

  3. Fold the bacon into the batter.

  4. Bake according to the cake mix box instructions.

  5. Let cool completely on a wire rack.

Instructions Maple Cream Cheese Icing:

  1. In a large bowl, cream together the cream cheese and the butter. Beat until light and fluffy. You can also use a stand mixer with a paddle attachment.

  2. Mix in the maple syrup.

  3. Add one-third of the sugar to the batter, and mix well. Add the second 1/3 and mix. Add the remaining and mix.

  4. In a piping bag or a large ziplock bag with a corner cut off, place the icing. Pipe the cooled cupcakes.

  5. Garnish with the crushed pretzels.
