Peach Cobbler (Liberty)

Ingredients Cobbler Dough:

  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 tablespoons butter, cut into small pieces
  • 1/4 cup boiling water, divided

 

Ingredients Oat Topping:

  • 3/4 cup all-purpose flour
  • 1/2 cup sugar
  • 3/4 cup old-fashioned oats
  • 1/2 teaspoon cinnamon
  • 1/2 cup butter, melted

 

Ingredients Filling:

  • 1/3 cup peach juice, divided
  • 1/3 cup brown sugar
  • 1 pound (4 cups) frozen peaches
  • 1 tablespoon cornstarch

 

Ingredients Cobbler Dough:

  1. In a stand mixer with a paddle attachment, combine the flour, sugar, brown sugar, baking soda, and salt. Mix together well.
  2. Into the flour mixture, slowly add the butter. The dough will become crumbly.
  3. Adding boiling water one tablespoon at a time, add the water until the dough is no longer crumbly. It will have a soft consistency.
  4. On a clean and floured surface, create a 3 inches wide log. Wrap the roll in plastic wrap and place in the refrigerator for at least 4 hours.

 

Instructions Oat Topping:

  1. In a medium bowl, combine the flour, sugar, oats, and cinnamon. Mix together well.
  2. Add the melted butter and stir well.
  3. Place in refrigerator.

 

Instructions Peach Filling:

  1. In a large saute pan over medium heat, combine 2 tablespoons of peach juice and the brown sugar. Cook until the sugar dissolves. It should take approximately 3 minutes.
  2. Stir in the frozen peaches. Cook and stir until the peaches become soft. It should take approximately 15 minutes.
  3. In a small bowl, stir together the additional peach juice and cornstarch.
  4. Mix the cornstarch mixture into the warm peaches. Stir until the juice becomes thick. Set the bowl aside.

 

Instructions Peach Cobbler:

  1. Preheat oven to 350F.
  2. Place 8 8-ounce ramekins on a baking sheet.
  3. Place a 1/4 cup of peach filling in each ramekin.
  4. Cut the cobbler dough into 8 slices.
  5. Place one on top of each peach ramekin.
  6. Top the dough with 1/4 cup of oat crumble.
  7. Bake for 20 minutes or until the dough is golden brown.
  8. Serve the cobblers warm.
