Ingredients Crust:
- 1 3/4 cup graham cracker crumbs
- 1 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
Ingredients Filling:
- 3/4 cup key lime juice
- 1 1/2 cup heavy whipping cream
- 1/4 cup cold water
- 1 tablespoon powdered gelatin
- 4 each egg whites
- 1 cup granulated sugar
Ingredients Meringue Topping:
- 6 each egg whites
- 1 1/4 cup granulated sugar
Instructions:
- In a medium mixing bowl, combine the graham cracker crumbs, melted butter and 1 cup of sugar.
- Place tart shells on a baking sheet, equally separate the graham cracker crumbs mixture into the shells. Place in the refrigerator for 2 hours. It is preferable to chill them overnight.
- In a double boiler, bloom gelatin and water. Cook until the mixture is clear. Do not boil the mixture.
- In a medium bowl, whip the heavy cream. Whip until soft peaks are formed.
- In a double boiler, combine the sugar and egg whites. Whip constantly so the eggs do not scramble. Cook until warm.
- In a stand mixer with whisk attachment, whisk the meringue mixture until the mixture is very stiff.
- Mix the meringue with the warm gelating. Mix until incorporated.
- Fold in the lime juice and heavy cream.
- Remove the tart crusts from the molds. Fill the crusts with the cream mixture.
- Place the meringue in a piping bag with a star piping tip inside. Fill the piping bag with the meringue and pipe on top of the tarts. Use a pastry torch to brown the top of the meringue. Serve right away.
