Hainan Mango Mousse

  • 12 ounces Mangoes in Syrup

  • 2 pieces Preserved Ginger (chopped)

  • 2 cup Heavy Cream

  • 20 grams Gelatin Powder (4 teaspoons)

  • 2 tablespoons Hot water

  • 2 Egg Whites

  • 1 ½ tbsp. light brown sugar

  • Lime zest

  • Preserved ginger


  1. In a small bowl with a strainer over it, drain the mangoes and save the syrup.

  2. In a food processor, blend the mangoes and the preserved ginger until smooth.

  3. Measure the mango puree. If it does not equal 1 ¼ cups, add some of the syrup to make up the rest.

  4. In a medium bowl, whip heavy cream until you reach soft peaks.

  5. Fold the puree mixture into the cream mixture.

  6. In a small bowl, dissolve the gelatin in hot water. Set aside to cool slightly.

  7. In a medium bowl, place egg whites and beat until soft peaks are formed.

  8. To the egg whites, add the sugar and beat.

  9. Fold the egg white mixture into the mango mixture.

  10. Spoon into serving dishes and garnish with lime zest and slices of preserved ginger.
