Cracked Wheat Rye Bread

Yield: 30 Small Loaves


  • 2 cups cold milk

  • 2 tbsp sugar

  • 3 tbsp vegetable oil

  • 2 tbsp salt

  • 3 eggs

  • 2 cups coarse rye meal

  • 5 1/2 cups bread flour

  • 2 packages active dry yeast


  1. Preheat oven to 400F degrees.

  2. Lightly grease a baking sheet.

  3. In an electric mixer with a dough hook and large bowl, combine all the ingredients. You want to let it mix for at least 10 minutes.

  4. Remove hook, cover bowl and let rest for at least 20 minutes.

  5. On a lightly floured clean surface, knead the dough and shape into a long roll. Cut the long roll into 30 pieces and roll them into balls.

  6. Place the balls on the baking sheet, press lightly on each ball and cover. Place in a warm area and let rest until they double in size.

  7. Bake for 20 minutes or until they turn light brown.
