Coconut Tarts

Ingredients Crust:

  • 3 tbsp Margarine
  • 1/4 cup Confectioner Sugar
  • 1/2 each Egg
  • 1 cup Whole Wheat Flour
  • 1/8 tsp. Baking Powder
  • 1/2 tsp. Vanilla Essence


Ingredients Filling:

  • 1 tbsp Margarine
  • 1/2 cup Confectioner Sugar
  • 1/2 each Egg
  • 1 tbsp Evaporated Milk
  • 3/4 cup Shredded Coconut


Instructions Crust:

  1. Grease muffin molds.
  2. In a large bowl, combine the whole wheat flour, and baking powder. Mix together well.
  3. Into the flour mixture, cut the margarine into the bowl. Use your fingertips to rub the margarine into the mixture. The mixture should resemble bread-crumbs.
  4. Add the egg, evaporated milk and vanilla extract. Mix well. The mixture will form a soft dough.
  5. On a clean and floured surface, roll out the dough to 1/4 inch thick.
  6. Use a large round cookie cutter to cut rounds. Place one circle in each muffin hole. Place the tin aside.


Instructions Filling:

  1. Preheat the oven to 400F.
  2. In a large bowl, mix together the margarine, confectioner’s, and egg really well. It’s best to use an electric mixer.
  3. Stir in the evaporated milk and shredded coconut. Mix until well combined.
  4. Fill each prepared shell with filling. Remember to not fill to the complete top.
  5. Bake for 25 minutes.
