Chocolate and Caramel Macadamia Tartlets

Yield: 10 Servings

Ingredients for Caramel Tartlets:

  • 2 cups sugar

  • ½ cup water

  • ¼ cup light corn syrup

  • 4 ounces unsalted butter

  • ½ cup heavy cream

  • 10 pre-baked tartlet shells (3 inches in diameter)

Ingredients for Chocolate Glaze:

  • 4 ounces dark chocolate (coarsely chopped)

  • ½ cup macadamia nuts (toasted and finely chopped)

Instructions for Caramel Tartlets:

  1. In a large saucepan, combine the sugar, water, corn syrup. Over medium heat, cook the mixture for about 10 minutes. The liquid will turn dark amber in color. Stir occasionally while cooking.

  2. Remove from heat and slowly whisk in the cream and butter. Slowly or it will bubble.

  3. Pour a ¼ inch thick layer of caramel into each tartlet shells.

  4. Let sit for 45 minutes.

Instructions for Chocolate Glaze:

  1. In a small saucepan over medium heat, bring the cream to a boil.

  2. In a medium bowl, place chocolate pieces in the bowl and then pour the hot cream over the chocolate. Let rest for a few moments, and then whisk until smooth.

  3. Pour a ¼-inch thick layer of chocolate over each tartlet while the chocolate is still warm.

  4. Place some macadamia nuts over the tartlet and let sit for at least 30 minutes.

  5. Serve when set.
