Cake
Ingredients:

1 ¾ cups egg whites
-
1 ¾ cups granulated sugar

1 ½ teaspoons cream of tartar
-
½ teaspoon salt
-
1 ¼ cups cake flour
-
1/8 teaspoon vanilla extract
-
1/8 teaspoon lemon zest
-
Strawberry Coulis
Instructions:
-
Preheat your oven to 375 degrees.
-
In a large bowl, beat eggs until stiff peaks form.

Combine the sugar with the cream of tartar and add them to the egg bowl.

In a large bowl, sift the cake flour, and salt together.

Add the flour mixture to the egg whites mixture into three parts.

Fold in the vanilla and the lemon zest.

Pour the mixture into an ungreased angel food cake pan. Bake for 40 to 50 minutes. The crust will become golden brown.

Cool cake upside down on the bottle. This ensures the cake has no pressure on it. Cool for 2 hours.

Serve with berries and the strawberry coulis.
Strawberry Coulis
Ingredients:

2 cups of strawberries
-
½ cup granulated sugar
-
1 cup strawberry jam
-
½ cup water
Instructions:
-
In a food processor, puree all the ingredients.
-
Pass the puree through a sieve.
-
Serve over the angel food cake.
