Disney Park Recipe:

Ingredients:

• Boxed Carrot Cake Mix

• 8oz Cream Cheese

• 1/2 cup Butter (softened)

• 1 cup Confectioner’s Sugar

• 1/2 Cup Crushed Pineapple (well drained)

• 1 tsp Vanilla Extract

• Additional flour

Instructions:

1. Preheat oven as per Carrot Cake Box Mix.

2. Place parchment paper on a baking sheet.

3. Prepare the Carrot Cake batter as per the box.

4. If the batter is super liquidity, add extra pastry flour and mix well. I had to add an entire extra cup of flour to keep the cookie together for the next step.

5. Using a cookie scoop, spoon the batter on to the prepared baking sheet.

6. Bake the cookie for 8 to 10 minutes. This really depends on the box mix you used and how big you made the cookies. I would sit by the oven and watch them bake. It’s really only 8 minutes.

7. Let the cookies cool on a wire rack until completely cool.

8. In a large bowl or stand mixer with a paddle attachment, whip together the butter, sugar, pineapple, cream cheese, and vanilla extract.

9. When the cookies are cool, pipe the filling covering the flat side of one cookie. Take another cookie and lightly press the flat side on the filling. It will make a cookie sandwich.
