Banana Toffee Mousse on Cocoa Crunch

Yield: 12 Servings


  • 1 cup white chocolate chips

  • 2 eggs

  • 2 egg yolks

  • 1 ½ tbsp. sugar

  • 1 tbsp powdered gelatin

  • 2 tbsps water

  • 1 ½ medium bananas (peeled and mashed)

  • 1 ½ cups heavy cream

  • 12 tbsps crushed chocolate cookies

  • ½ cup chocolate-covered toffee pieces


  1. In a double boiler, melt the chocolate chips. Set aside.

  2. In a double boiler, combine the eggs, egg yolks, and sugar. Whisk for 4 minutes. Remove from heat afterward.

  3. In a small bowl, sprinkle gelatin over hot water. Let sit for 5 minutes. Microwave for 10 seconds, stir the mixture, the gelatin will be melted. Set the bowl aside.

  4. In a medium bowl, beat the eggs and sugar together. The mixture will become fluffy. Add the gelatin mixture and stir well. Add the mashed bananas.

  5. Fold in the white chocolate into the mixture.

  6. In a large bowl, whip the heavy cream until soft peaks have been created. Fold the whipped cream into the bananas mixture. It will create the mousse. Divide the mixture into two parts.

  7. Place 1 tbsp of chocolate cookie crumbs into 12 ½-cup ramekins. Evenly top the cookies with half the mousse. Add a layer of toffee pieces.  Repeat to create next layers with remaining ingredients.

  8. Chill in the refrigerate for 2 hours before servings.
