Banana-Cinnamon Bread Pudding (Tusker)

Ingredients Bread Pudding:

  • 14 oz Cinnamon Bread
  • 12 oz Milk
  • 8 oz Liquid Eggs
  • 4 oz Brown Sugar
  • 4 oz. White Sugar
  • 10 Ripe Bananas
  • 1 Tbsp Cinnamon
  • 1 Tbsp Vanilla
  • 1/4 Nutmeg
  • 4 oz. Raisins
  • 4 oz. Pecans
  • 2 oz. Butter
  • 3 oz. Sanding Sugar

 

Instructions Vanilla Sauce:

  • 1 1/2 Tbsp Butter
  • 1 1/2 Tbsp Flour
  • 3/4 Cup Sugar
  • 1/8 tsp Salt
  • 1 1/4 Cup milk
  • 1 cup Whipping Cream
  • 1 Egg (beaten)
  • 1/2 Tbsp Vanilla Paste

 

Instructions Bread Pudding:

  1. Grease and flour a 12-inch round pan.
  2. Cube the cinnamon bread into 1-inch cubes.
  3. Slice 4 bananas.
  4. Place the bread into the prepared pan. Place the banana slices over the bread.
  5. In a large bowl, combine all ingredients (except the bread, banana, sanding sugar and butter). Mix together well.
  6. In a medium bowl, mash 6 bananas.
  7. Mix the bananas into the large bowl.
  8. Pour the wet mixture over the bread. Let the mixture soak in for about 20-30 minutes. You want to make sure all the bread has egg mixture soaked into it.
  9. Preheat oven to 325F.
  10. Bake for 25 minutes.
  11. Brush the top with the melted butter.
  12. Sprinkle with the sanding sugar. Serve with the vanilla sauce.

 

Instructions Vanilla Sauce:

  1. In a small saucepan, melt the butter.
  2. Stir in the flour. Cook for 5 minutes while stirring the entire time.
  3. In a small bowl, mix together all remaining ingredients.
  4. Stir in the flour and butter. Whisk really well. The mixture will become thick is about 5 to 8 minutes.
  5. Serve.
