Vanilla Milk Chocolate Cupcakes

Yield: 12 Cupcakes or one 9-inch cake

Ingredients:

  • 1 ½ cups all-purpose flour

  • 1 tsp baking powder

  • ¼ tsp baking soda

  • ¼ tsp fine sea salt

  • 2/3 cup whole milk

  • 1 ½ tsp pure vanilla extract

  • ½ cup unsalted butter (slightly softened)

  • 1 cup sugar

  • 1 large egg

  • 2 large egg whites

  • Milk Chocolate Cream Cheese Frosting

Instructions:

  • Preheat oven to 325F

  • Using paper liners, prepare a cupcake pan.

  • In a medium bowl, sift together the flour, baking powder, baking soda, and salt. Whisk them together.

  • In a small bowl, mix together the milk and vanilla.

  • In a stand mixer with a paddle attachment, cream together the butter and sugar together. Mix on medium to high speed. It will be light and fluffy.

  • Add the eggs and egg whites one at a time.

  • Add half the flour mixture and mix. Add half the milk mixture and mix. Continue with the remaining flour and milk mixtures.

  • Pour the batter into the prepared cupcake pan and bake for 18 to 20 minutes.

  • Cool on a wire rack before icing with the Milk Chocolate Cream Cheese Frosting.
