Yield: 12 Cupcakes or one 9-inch cake
Ingredients:

1 ½ cups all-purpose flour
-
1 tsp baking powder
-
¼ tsp baking soda
-
¼ tsp fine sea salt
-
2/3 cup whole milk
-
1 ½ tsp pure vanilla extract
-
½ cup unsalted butter (slightly softened)
-
1 cup sugar
-
1 large egg
-
2 large egg whites
Instructions:

Preheat oven to 325F
-
Using paper liners, prepare a cupcake pan.

In a medium bowl, sift together the flour, baking powder, baking soda, and salt. Whisk them together.

In a small bowl, mix together the milk and vanilla.

In a stand mixer with a paddle attachment, cream together the butter and sugar together. Mix on medium to high speed. It will be light and fluffy.

Add the eggs and egg whites one at a time.

Add half the flour mixture and mix. Add half the milk mixture and mix. Continue with the remaining flour and milk mixtures.

Pour the batter into the prepared cupcake pan and bake for 18 to 20 minutes.

Cool on a wire rack before icing with the Milk Chocolate Cream Cheese Frosting.
